One of the biggest differences I found was in the dough. While the recipe is straightforward, there are a few personal tricks I've picked up that make all the difference. When you're kneading, don't overdo it, but make sure it's smooth and elastic. That short resting period isn't just for convenience; it allows the gluten to relax, making your tortillas much easier to roll out thinly without springing back. I remember my first few attempts, the dough was so stubborn! But a good rest makes them pliable and soft. Also, regarding ingredients, while butter works great, I sometimes use lard for an even richer, more authentic flavor, or olive oil if I want a lighter, vegan option. Experiment to find what you love! Now, let's talk about rolling. This was my biggest hurdle initially. The key is to keep your surface lightly floured and roll from the center outwards, rotating the dough frequently. Aim for a consistent thinness – you should almost be able to see through them!
