The soup that turned me into a broccoli believer

🧡 Homemade Broccoli Cheese Soup

✅ You’ll Need:

* 3 cups vegetable broth

* 1 cup grated carrot

* 1 cup diced celery

* 2 potatoes, grated

* 4½ cups chopped broccoli

* 1 yellow onion

* 5 Tbsp butter

* ¼ cup flour

* 2 cups half and half

* 1½ cups whole milk

* 3 cups shredded cheddar

* Salt & pepper

👩‍🍳 How to Make It:

1. Prep veggies: Chop, dice, and grate everything. Let cheese come to room temp.

2. Cook veggies: Add broth, carrot, celery, and potato to pot. Boil, then simmer 3–5 min. Add broccoli and cook 2 more min.

3. Sauté onion: In butter, until golden. Add to soup.

4. Make roux: Melt butter, whisk in flour. Slowly stir in half & half and milk. Whisk until thick and bubbly.

5. Combine: Slowly stir roux into soup. Cook 2 more min.

6. Cheese it up: Remove from heat, stir in cheddar until melted. Season to taste.
