Cozy Thai Red Curry That Hits Every Time!
Creamy, flavorful, and ready in under 30 minutes! This red curry is loaded with veggies and customizable with chicken or shrimp 🍤🥕🍛
✅ Ingredients:
* 3 tbsp oil (canola, veggie, or coconut)
* 1 leek (white + light green only), chopped
* 1 small yam, peeled + cubed
* 1 cup chopped cabbage
* ½ green bell pepper, chopped
* 1 cup snap peas, halved
* 2 tsp fresh ginger
* 2 garlic cloves, minced
* 1–6 tbsp red curry paste (adjust to heat!)
* 1½ cups low-sodium chicken broth
* 14oz can unsweetened coconut milk
* 1–2 tsp cornstarch
* 1 tsp fish sauce
* 1 tbsp lime juice
* 1 tbsp brown sugar
* 1 chicken breast (or ½ lb shrimp)
* 1 cup Thai basil leaves
* Optional: cooked jasmine rice
Fried Shallots:
* 2 shallots, sliced thin
* 3 tbsp oil
👩🍳 Instructions:
1. Sauté leeks in oil. Add yams, cabbage, bell pepper, peas. Cook 2 mins.
2. Add ginger, garlic, curry paste. Sauté 3 mins. Add chicken if using.
3. Stir in broth. Mix cornstarch into coconut milk, then pour in. Simmer 15 mins.
4. Meanwhile, fry shallots in oil until golden. Set aside on paper towels.
5. Add fish sauce, lime juice, brown sugar (and shrimp if using). Simmer 5 mins.
6. Stir in Thai basil. Serve hot with fried shallots + cilantro on top!
