Easy Homemade Blintzes

What You Need

✅ 1 1/4 cups milk

✅ 1 cup all-purpose flour

✅ 1/4 cup granulated sugar

✅ Pinch of salt

✅ 4 large eggs

✅ 1 tsp vanilla

✅ 3 Tbsp butter, softened

Cheese Filling

✅ 1 cup ricotta cheese

✅ 8 oz cream cheese, softened

✅ 1/4 cup granulated sugar

✅ 1 egg yolk

✅ 1 tsp lemon juice

✅ 1 tsp vanilla extract

Optional Toppings

✅ Berry sauce

✅ Fresh berries

✅ Powdered sugar

✅ Lemon zest

✅ Mint

✅ Whipped cream

✅ Applesauce or syrup

Instructions

1️⃣ Mix ricotta, cream cheese, sugar, egg yolk, lemon juice, and vanilla until smooth. Chill in the freezer while you cook the blintzes.

2️⃣ Blend milk, flour, sugar, eggs, butter, vanilla, and salt until smooth to make the batter.

3️⃣ Heat a skillet over medium heat. Pour about ¼ cup batter into the pan and swirl to create a thin pancake.
