Protein Savory Beef & Veggie Rice Bowl 🍚

Protein meal in 45 min !!! 🍽️

**Ingredients:**

- 1 lb beef

- olive oil

- 1 tsp paprika

- Juice of 1 lime

- 1 tsp sea salt

- 1/2 tsp black pepper

- 1 tsp onion powder

- 1 tsp garlic powder

- 1/4 tsp cayenne pepper (adjust to taste) I like a kick

- 1 cup green beans, chopped ( I used the frozen brand from walmart )

- 1/2 onion, diced

- 1/2 red pepper, diced

- 1/2 yellow pepper, diced

- 1 tsp minced garlic

- 1 cup white rice

- 1 tbsp olive oil

- 1/2 onion, diced

- 2 cups water

- Salt to taste - kosher or sea salt

**Instructions:**

1. **Prepare the Beef⏲️:**

- In a bowl, I typically combine the beef with olive oil, paprika, lime juice, sea salt, black pepper, onion powder, garlic powder, and cayenne pepper. Mix well to ensure the beef is evenly coated. Set aside to marinate for at least 15 minutes.

2. **Cook the Beef 😏:**

- Heat a skillet over medium-high heat. Once hot, add the marinated beef to the skillet. Cook for a while stirring occasionally, until the beef is browned and cooked through. Remove from heat and set aside.

3. **Prepare the Veggie Mix 🫑🌶️:**

- In the same skillet, add a tablespoon of olive oil. Add the diced onions, red pepper, yellow pepper, minced garlic, and chopped green beans. Season with sea salt, black pepper, and garlic powder. Cook for 5-6 minutes, or until the vegetables are tender and a little burnt. Remove from heat and set aside.

4. **Caramelize the Onions 🧅:**

- In a separate saucepan, heat olive oil over medium heat. Add the diced onions and stir occasionally, until they turn golden brown and look caramelized. Season with a pinch of pepper and light salt ( or how much you'd like )

Simmer until the onions are nicely browned.

Remove from heat & let it calm down.

5. **Cooking the Rice 🍚:**

- In a pot, heat a tablespoon of olive oil over medium heat. Add the diced onions and cook until translucent. Add the white rice and stir to coat the rice with oil. Pour in the water and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked soft and the water is absorbed. Fluff the rice with a fork or your kitchen tool.

6. **Your final presentation ✨... the Bowl 🥣:*

- To assemble the rice bowl, divide the cooked rice among serving bowls, if you are meal prepping separate them into different containers.

Top the rice with the cooked beef, the veggie mix, and caramelized onions. Garnish with fresh herbs like parsley or cilantro if you want! - You can also add spicy mayo, soy sauce or any topping you'd like
