Meatball & Potato Stew 🥶
Hey foodies! I wanted to share my absolute favorite recipe for a comforting meatball and potato stew that’s been a lifesaver on busy weeknights. It’s so satisfying and surprisingly easy to make, perfect for when you need a warm hug in a bowl. I usually start with about a pound of ground beef for the meatballs, but you can totally use a mix of beef and pork for extra flavor. I keep my meatballs simple: just the ground meat, a little breadcrumb, an egg, finely chopped onion, garlic powder, salt, and pepper. Mix everything gently – don't overmix, or they'll be tough! I like to brown them first in a large pot or Dutch oven, just to get that lovely crust, then set them aside. This step really locks in the flavor and gives the stew a richer taste. If I want a thicker stew, I’ll sometimes make a quick slurry with a tablespoon of cornstarch mixed with a little cold water and stir it in during the last 10 minutes of cooking. My secret tip? A splash of Worcestershire sauce or a tiny bit of red wine at the end adds incredible depth! Taste and adjust the seasonings – sometimes a pinch of sugar balances out the acidity from the tomatoes, if you use them. This stew is fantastic on its own, but I love serving it with some crusty bread for dipping, or even over a bed of fluffy rice if I'm feeling extra hungry. It's truly a complete meal in one pot, and the leftovers are always just as good, if not better, the next day. For those really busy evenings, don't hesitate to use good quality frozen meatballs!
