Cooking a steak on a charcoal grill is not only a culinary skill but also an experience that can elevate your backyard gatherings. Start by selecting the right cut of steak; ribeye, T-bone, and sirloin are popular choices known for their flavor and tenderness. Before grilling, marinading your steak enhances the flavor profile significantly. A simple marinade of olive oil, garlic, and herbs can work wonders. Consider incorporating dry rubs with combinations of spices like paprika, garlic powder, and black pepper for an added kick. The key to good charcoal grilling lies in temperature control. Allow the coals to burn until they’re covered with a white ash, which indicates they are at optimal cooking temperature. This not only ensures even cooking but also leads to that desirable char on the outside. Using a thermometer can help in checking for doneness; for medium-well, aim for an internal temperature of about 150°F to 160°F. Additionally, let the steak rest for a few minutes after cooking—this allows the juices to redistribute, resulting in a juicier bite.
