There’s a new Korean restaurant in Fremont that wants to create “a new wave of Korean dining” in Seattle and honestly, it feels different in the best way.
Paran means “a wave that makes a great impact” in Korean, and the menu blends comforting Korean flavors with a more modern, elevated dining experience that still feels approachable and made for sharing.

Visiting Paran truly felt like embarking on a fresh culinary journey in Seattle. The atmosphere is welcoming and designed to encourage lingering and sharing dishes among friends, which made our dining experience even more enjoyable. What stood out most was how the restaurant balances traditional Korean flavors with modern twists, making it approachable for newcomers and exciting for seasoned fans of Korean cuisine. One highlight was the Beef Tartare — limited to just 15 servings a day — which impressed with its fresh taste enhanced by pistachios and a unique black sesame sauce. The Pan Fried Mandu with its crispy lace was a delightful texture contrast, disappearing quickly from our plates. Their signature Galbi Platter offered a memorable experience with the sweet and tangy maesil soy sauce made from Korean green plum, a flavor you might not encounter often but adds a perfect zing. The noodle dishes surprised us pleasantly too. The Seaweed Pollack Roe Noodles delivered a silky umami depth combined with a subtle oceanic brininess, while the Volcano Gochujang Noodles brought a pleasing heat balanced by creamy sauce, creating a comforting yet bold profile. For drinks, the Matcha Lush was refreshingly earthy and paired well with the variety of dishes, offering a palette cleanser experience. Meanwhile, the Mint Berry Pear Ade was light and fruity, perfectly complementing the meal’s diverse flavors. Overall, Paran offers a new wave of Korean dining in Seattle that goes beyond traditional eating, encouraging diners to explore and enjoy a variety of flavors and textures together in a cozy, inviting setting.
