Black Bean Brownies

@BJKtheChef: 2 standard can (15 ounces) black beans

2 brown eggs (flax seeds for no eggs)

¼ cup grape seed oil

2 teaspoons pure vanilla extract

2 tablespoons almond milk

1 cup unsweetened cocoa powder

½ teaspoon baking soda

¼ teaspoon salt

¾ cup packed light brown sugar (date syrup to taste for no sugar)

3 oz dark chocolate chips

8 pitted medjool dates

Blend the wet ingredients

In a basic blender, combine black beans, eggs, oil, vanilla, dates, and milk. Blend until completely smooth.

Mix the dry ingredients

In a large bowl, smoothly whisk together the cocoa powder, baking soda, salt, and brown sugar add half of chocolate chips.

Combine wet and dry ingredients until smooth. Fold in the rest of the chips. Taste batter then add date syrup to enhance sweetness (to taste)

Line parchment paper in 9X9 or 9x11 pan add batter smoothly and evenly. Top with walnuts and extra chips.

Bake

Bake at 325°F for 30-40 minutes, or until the top is set, springs back gently in the center, and the pan doesn’t jiggle when shaken.
