For the pasta, opting for chickpea pasta is a smart swap to up the protein and fiber without extra carbs. Trader Joe’s kale pesto adds a vibrant, fresh note that pairs wonderfully with lemon pepper chicken. I sometimes like to add sun-dried tomatoes for extra depth and a hint of tartness.
