Crockpot Creamy Potato & Hamburger Soup 🍲

Ingredients:

1 pound ground beef 🍖

1 large onion, chopped 🧅

2 cloves garlic, minced 🧄

4 large potatoes, peeled and diced 🥔

3 large carrots, sliced 🥕

2 celery stalks, sliced 🌿

4 cups chicken or beef broth 🍲

1 teaspoon dried thyme 🌱

1 teaspoon dried parsley 🌿

1 teaspoon paprika 🌶️

Salt and pepper to taste 🧂

1 cup heavy cream 🥛

2 cups shredded cheddar cheese 🧀

1 cup milk 🥛

2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening) 🌾

Fresh parsley, chopped (for garnish) 🌿

Extra shredded cheddar cheese (for garnish) 🧀

👩‍🍳 Instructions:

1️⃣ Brown the Ground Beef:

In a large skillet, brown the ground beef over medium-high heat until it’s no longer pink. Drain any excess fat.

Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes. 🍖🔥

2️⃣ Prepare the Crockpot:

Transfer the browned beef mixture to a crockpot.

Add the diced potatoes, sliced carrots, and sliced celery. 🥔🥕🌿

3️⃣ Add Broth and Seasonings:

Pour in the chicken or beef broth.

Add the dried thyme, dried parsley, paprika, salt, and pepper. Stir to combine. 🍲🌿

4️⃣ Cook on Low:

Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes and vegetables are tender. ⏲️

5️⃣ Add Cream and Cheese:

Stir in the heavy cream, shredded cheddar cheese, and milk.

If you prefer a thicker soup, add the cornstarch mixture and stir well.

Continue to cook on low for an additional 15-20 minutes, until the cheese is melted and the soup is creamy. 🥛🧀

6️⃣ Serve:

Ladle the hot soup into bowls and garnish with fresh chopped parsley and extra shredded cheddar cheese if desired.

Serve with crusty bread for a complete meal. 🍞🌿

... Read moreYou know those days when you just need a big, warm hug in a bowl? That's exactly what this Crockpot Creamy Hamburger Potato Soup is for me! I used to think making a hearty soup from scratch was a huge undertaking, but ever since I discovered the magic of the slow cooker, my dinner game has been completely transformed. This recipe, with its rich, creamy broth, tender ground beef, and satisfying diced potatoes and sliced carrots, has become a staple in my home, especially during cooler months. It's truly a rustic, comforting meal that feels homemade without all the fuss. One of my favorite things about this soup is how versatile it is! If you're like me and love a really thick, creamy potato soup, don't shy away from the cornstarch mixture – it makes all the difference. I've also found that using a good quality heavy cream at the end really brings out that luxurious texture. And for an extra cheesy kick, sometimes I'll swirl in a little cream cheese with the cheddar. It’s all about personal preference, so feel free to experiment! Want to make it your own? This recipe is super forgiving! While the classic combination of ground beef, potatoes, and carrots is perfect, I often add other veggies I have on hand. Bell peppers or even a handful of frozen corn or peas thrown in during the last hour of cooking can add extra color and nutrients. If you like a little heat, a pinch of red pepper flakes or a dash of hot sauce can really wake up the flavors. For a different herb profile, try fresh rosemary or bay leaves simmering with the broth. And speaking of the 'rustic' feel, serving it up in a cozy, rustic bowl, just like the one in the picture (with that lovely fresh parsley garnish!), always makes it feel extra special. This creamy hamburger potato soup is a complete meal on its own, but it’s absolutely divine served with a side of warm, crusty bread or even some homemade cornbread to soak up every last drop of that amazing broth. I love having a simple green salad on the side to balance out the richness. And the best part? It makes fantastic leftovers! I usually make a big batch and store it in airtight containers in the fridge for up to 3-4 days. It reheats beautifully on the stovetop or in the microwave, making for quick and easy lunches. You can even freeze portions for up to 2-3 months – just thaw overnight in the fridge and reheat gently, adding a splash of milk or broth if it's too thick. Honestly, if you're looking for an easy, hearty, and incredibly satisfying soup that will warm you from the inside out, you absolutely have to try this Crockpot Creamy Hamburger Potato Soup. It’s comforting, packed with flavor, and so simple to make with minimal effort. It’s truly become a go-to for me, and I hope it becomes one for you too!
