Ingredients:

1 lb fresh green beans, trimmed and cut into bite-sized pieces 🥬

4 cups baby potatoes (or 4 large potatoes, peeled and diced) 🥔

6 slices bacon, chopped 🥓

1 onion, diced 🧅

2 cloves garlic, minced 🧄

1 packet (1 oz) ranch seasoning mix 🌿

1 cup chicken broth 🍗

1/2 teaspoon dried thyme 🌿

1/2 teaspoon dried rosemary 🌿

Salt and pepper, to taste 🧂

2 tablespoons olive oil (optional, if needed) 🫒

Instructions:

Cook the Bacon:

In a large skillet or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside, leaving the drippings in the pan. 🥓🔥

Sauté the Aromatics:

In the same skillet with the bacon drippings, add the diced onion. Cook until softened, about 5 minutes. 🧅🍳

Add the minced garlic and cook for another minute until fragrant. 🧄👃

Cook the Potatoes:

Add the diced potatoes to the skillet. Cook, stirring occasionally, until the potatoes start to brown slightly, about 5-7 minutes. 🥔🔄

Add Green Beans and Seasonings:

Stir in the green beans, ranch seasoning mix, dried thyme, and dried rosemary. 🌿🧂

Pour in the chicken broth and bring the mixture to a simmer. 🍗💧

Cover the skillet, reduce the heat to low, and cook for about 15-20 minutes, or until the potatoes and green beans are tender. ⏲️

Finish the Dish:

Once the vegetables are tender, stir in the cooked bacon. 🥓🔄

Taste and adjust seasoning with salt and pepper as needed. 🧂👅

... Read moreOkay, so you guys loved my last green bean recipe, and I just had to share another winner that's become a staple in my kitchen: these amazing Country Ranch Green Beans and Potatoes with Bacon! Seriously, if you're looking for a hearty side dish that feels like a warm hug, this is it. It's so much more than just a side; it's practically a meal in itself and perfect for those cozy nights in, especially as the weather gets cooler. What I absolutely adore about this recipe is how effortlessly delicious it is. The combination of tender green beans and those golden-brown diced potatoes, all coated in that savory ranch seasoning and rich chicken broth, is just divine. And let's not forget the star of the show – those crispy pieces of bacon! They add such an incredible depth of flavor and irresistible texture that really elevates the whole dish. It’s wonderfully seasoned with earthy herbs like dried thyme and rosemary, which just brings out all the rustic, comforting vibes, making every bite feel homemade and special. I've made this countless times, and I've picked up a few tips to make it even better. For the bacon, don't rush it! Cook it slowly over medium heat until it's perfectly crisp. Those drippings? They're pure gold, so definitely use them to sauté your onions and garlic – it layers in so much flavor right from the start. When it comes to the potatoes, I find cutting them into uniform dice helps them cook evenly. You want them tender but still holding their shape and getting a lovely golden-brown crust, not mushy. A little trick: after adding the potatoes, let them sit undisturbed for a few minutes before stirring to get that perfect sear. One little variation I sometimes do is adding a sprinkle of freshly grated Parmesan cheese right at the end, just as it’s finished cooking. It melts beautifully into the hot vegetables, adding another layer of salty, cheesy goodness that's absolutely divine. Or, if you like a little kick, a pinch of red pepper flakes added with the ranch seasoning can really wake things up and add a surprising warmth. I've also swapped out chicken broth for vegetable broth when I wanted a slightly lighter flavor profile, and it worked beautifully. This dish truly adapts! This side dish pairs incredibly well with so many main courses – think classic roasted chicken, juicy pork chops, or even a perfectly seared steak. It’s also fantastic alongside a holiday ham or turkey. But honestly, I've had it as a light and satisfying lunch all on its own because it's just that good and filling. It’s truly a versatile dish, and the best part is how simple the steps are. You get incredible, complex flavor without a ton of fuss or a lengthy ingredient list. If you're looking to impress without stress, or just want to treat yourself and your loved ones to something comforting and delicious that everyone will rave about, you HAVE to try this Country Ranch Green Beans and Potatoes with Bacon recipe. Trust me, it's a keeper! Let me know if you try it and what you think in the comments below!
