BBQ Chicken Zucchini Boats
Ingredients:
4.5oz shredded cooked chicken
2 tablespoons G Hughes Original BBQ sauce.
3 servings of zucchini
3/4 teaspoon olive oil
1/4 cup reduced fat cheddar cheese
Green onion and cilantro to garnish
Directions:
Hollow out the zucchini and weight out 3 servings. Brush the squash with the olive oil. Mix the BBQ sauce with the chicken. Stuff the zucchini. Top with the cheese. Cover with foil and bake at 400 degrees for 35 minutes. Garnish when green onion and cilantro.
One serving. Full lean and green. One leaner, 3 greens, 3/4 fat and 3 condiments. 2 Tablespoons BBQ equals one condiment.
