Anytime I have cabbage on hand, this is the recipe I like to make! It comes together in 20 minutes and it’s packed full of veggies! Sometimes I use tofu and sometimes I use ground turkey.

Ingredients

2 Tbsp Avocado Oil (or any cooking oil)

1 lb ground Turkey or Pork (or marinated tofu, crumbled)

2 cloves Garlic, minced (or 1 tsp Garlic Powder)

14oz (Half a head) fresh Cabbage, shredded (coleslaw can be substituted)

4 Carrots, shredded

1/4 cup Low Sodium Soy Sauce (or any sauce you love)

1 tsp Ground Ginger

2 eggs (optional)

Sriracha (optional)

Green onions, sliced, for garnish

Instructions

1. Heat a large sauté pan over medium heat and add oil. Once oil is hot, Add ground turkey, pork, or tofu. Sauté until meat is cooked through or tofu is crispy. Add garlic and saute until fragrant, about 30 seconds more.

2. Add coleslaw, soy sauce, and ginger and sauté until cooked down a bit.

3. If using eggs, Move everything to the sides of the pan, creating a well in the center. Turn the heat on low, crack the eggs into the well, and scramble until cooked through.

4. Stir the eggs and meat mixture together and serve topped with sriracha (if desired) and green onions. Enjoy!
