I've found that these cooler weather crops tolerate light frosts well, which is important since Zone 7 can still experience chilly nights. Transplanting cole crops such as broccoli, cabbage, and kale outdoors around mid-April can boost your garden’s productivity, but it's essential to harden off seedlings beforehand. Gradually exposing young plants to outdoor conditions helps reduce transplant shock and supports strong growth. Warmer sections of Zone 7 also allow planting of heat-loving tomatoes and peppers at this time. Starting these in pots indoors and then transplanting after the last frost date has worked well for me. In addition to edibles, flowering plants like calendula, alyssum, and snapdragons add vibrant color and attract pollinators, enhancing garden health. Seeds of larkspur, bachelor's buttons, zinnias, and sunflowers can also be sown outdoors to establish a cheerful flower display later in the season. Covering seedlings when frost is forecast is crucial. Lightweight frost cloths or even old sheets can protect delicate plants without overheating them during the day.
