Homemade chili cheese loaded baked potato; everything I used was approved on WIC, besides the queso & we had ground beef at home.
Of course, check your state to see which vegetables are approved. Even if you don’t have WIC, this is a very inexpensive meal, under $25.
Ingredients:
• 2 large russet potatoes
• 1 cup of chili (homemade or canned)
• 1 cup shredded cheddar cheese
• ¼ cup sour cream
• 2 tbsp green onions, sliced
• 2 tbsp butter
• Optional: jalapeños, bacon bits, hot sauce
Instructions:
1. Bake the Potatoes:
• Preheat oven to 400°F (200°C).
• Wash and scrub the potatoes clean, then pierce them a few times with a fork.
• Rub with a little oil and salt (optional for crispy skin).
• Bake directly on oven rack for 45–60 minutes, or until soft inside.
2. Heat the Chili:
• While the potatoes are baking, warm up your chili on the stovetop or in the microwave.
3. Assemble:
• Once potatoes are done, carefully slice them open down the middle.
• Fluff the inside with a fork and mix in butter.
• Spoon hot chili over each potato.
• Sprinkle a generous amount of cheddar cheese on top so it melts into the chili.
4. Top It Off:
• Add a dollop of sour cream.
• Sprinkle on green onions, and extra toppings like jalapeños or bacon bits if desired.
