The process starts with baking the potatoes at 350°F for an hour to ensure they are cooked through. After letting them cool slightly, cut them in half and scoop out most of the flesh. This is critical for creating that crispy outer shell. Prepare a light olive oil mixture with garlic and salt, brushing it onto the outer part of the potato skins. This adds flavor and helps achieve that desirable crispy texture when you bake them again at 400°F for approximately 15 minutes. The final touch before serving includes adding a generous amount of mild cheddar cheese and mozzarella, along with crispy bacon, and broiling for just a few minutes to melt the cheese beautifully. These homemade potato skins can be served with a side of sour cream for dipping, enhancing their flavor even further. They are not only a fantastic snack for game day or parties but also a delightful way to use leftover potatoes. With their incredible taste, they'll make a satisfying treat whether enjoyed alone or as part of a larger meal. Try making homemade potato skins at your next gathering!
