Lumberjack casserole
Easy dinner idea. Great for those days when you want something delicious and filling but don’t want to worry about it until dinner time. Takes like 20 minutes to get it in the crockpot then you’re set.
Ingredients:
•1lb. lean ground beef
•2 small russet potatoes, cubed
•1 sweet yellow onion, diced
•1 tsp. onion powder
•1 tsp. garlic powder
•1 tsp. chili powder
•1 tsp. salt
•¼ tsp. freshly ground pepper
•15 oz. can petite diced tomatoes
•15 oz. can kidney beans, drained
•10.5 oz. can cream of mushroom soup
•8 oz. bag sharp cheddar cheese
Start by browning the meat with the onion in a skillet. I season my beef with salt,pepper, onion powder, garlic powder, and chili powder.
Once the beef is fully cooked add that to the slow cooker with the remaining ingredients (except the cheese).
Stir everything together. Cover and Cook on LOW for 5-6 hours.
Stir together and Sprinkle the cheese over the casserole.
Place the lid back on and let the cheese melt, this will only take a few minutes. Serve and enjoy!
