Pumpkin seeds 🥹
this year they’re so good! I boiled them first for about 30 minutes, then I let them dry. Tossed them in olive oil, salt, pepper, paprika, chili powder and white sugar, then baked them for 25 minutes at 350°F. AMAZING!!!

Roasting pumpkin seeds is not only a delicious treat but also a fantastic way to reduce food waste after carving pumpkins. To make your pumpkin seeds even more enjoyable, consider experimenting with different seasonings. Popular options include garlic powder, cayenne pepper, or even a sweet cinnamon sugar blend for a unique twist. To achieve the perfect crunch, ensure that your seeds are thoroughly dried before roasting. A common mistake is baking them at too high a temperature; maintaining 350°F helps in achieving that golden brown finish without burning. In addition to being a tasty snack, pumpkin seeds, also known as pepitas, are packed with nutrients. They are high in magnesium, iron, and zinc, making them an excellent choice for a healthy snack. Enjoy them as a standalone treat or as a topping for salads and soups. Not only do they add a delightful crunch, but they also boost the nutritional value of your meals. So next time you carve a pumpkin, don't forget to save those seeds and roast them to perfection!
