Buckwheat Cooking:

1. ROAST THE BUCKWHEAT;

Take a pot on the stove at medium high heat. Take 1 cup of raw buckwheat and pour into the pot DRY. No oils.

Roast the buckwheat until fragrant. (Will smell like a seed baking) should only take 5 min. Stir regularly so didn’t burn and evenly roasts.

2. add 1 cup of water to the pot.

No more or it will become soggy. Water will boil. Leave uncovered until water fully evaporates. Stir regularly so it doesn’t stick to bottom of the pan.

If you’re making a savory buckwheat, add salt and olive oil to the water as it cooks for flavor. But not too much salt!

If sweet buckwheat, once water is gone, and you want a “cereal” add your milk here to warm up with the grain. Cook on med heat so doesn’t overcook buckwheat.

You don’t have to add anything though if you want just the buckwheat.

SWEET BREAKFAST VERSION:

Add everything to a bowl and add honey and berries. You can also add cinnamon. You can even add a little teaspoon of jam.

Savory buckwheat breakfast:

Add any roasted veggies of your choice and sunny side egg if you want.

MUSHROOM BUCKWHEAT LUNCH:

1. cook buckwheat as above.

2. In a seperate pan, use a little olive oil on med high heat and add mushrooms. cook until they start becoming soft and brown. Add a some butter and salt and cook down (taste to make sure it’s enough salt and seasoning) add any other seasoning to the mushrooms. Salt/pepper/garlic/onion/ spices whatever you want. Mushrooms roast and season like steak.

3. Add buckwheat to a bowl once water is cooked down and mix with you mushroom and butter.

4. Cut fresh dill and add. (I use a lot)

5. Add anything else to the bowl.

Then, I decided to give it a try, and wow, my kitchen (and my diet!) hasn't been the same since! I quickly learned that it's not just delicious but also incredibly good for you. One of the biggest reasons I've fallen in love with buckwheat is its amazing health benefits. If you're wondering 'how can I make my meals healthier?' or looking for 'rutin-rich foods,' buckwheat is your answer! It's naturally gluten-free, which is fantastic for those with sensitivities, and it's packed with plant-based protein and dietary fiber, keeping you full and aiding digestion. Plus, it’s a great source of minerals like magnesium, manganese, and zinc. And yes, it contains rutin, a powerful antioxidant that's great for heart health. So, every time I enjoy a bowl, whether it's piled high with fresh berries and a splash of milk for breakfast or a savory dinner, I know I'm doing something good for my body. Beyond the basic cooking, getting the seasoning right (often searched as buchweizen richtig würzen or hajdina fűszerezése in other languages!) is key to transforming buckwheat from good to absolutely amazing. For savory dishes, don't be shy with your herbs and spices! Besides the salt and olive oil mentioned in the main recipe, I love adding dried thyme, a pinch of smoked paprika, or even some ground coriander when I'm cooking it for a side dish. Sautéing a base of finely diced onions and garlic before adding the buckwheat and water/broth also infuses incredible depth. It makes a fantastic, hearty side for grilled chicken, roasted vegetables, or even mixed into a comforting stew. And if you're looking for 'buckwheat dinner recipes,' you’re in for a treat! While the mushroom lunch is a staple, I've experimented with so many other dinner ideas. One of my favorites is a hearty buckwheat bowl. Think of it like a deconstructed meal: a base of perfectly cooked buckwheat, topped with your favorite roasted veggies (broccoli, sweet potatoes, bell peppers all work wonderfully), some protein like baked tofu or shredded chicken, and a drizzle of a tahini or peanut dressing. It's incredibly customizable and makes for a satisfying, nutritious weeknight meal. Another fantastic way to use buckwheat for dinner is in stuffed dishes. I’ve made delicious vegetarian stuffed bell peppers or even cabbage rolls using buckwheat mixed with sautéed vegetables and herbs as the filling. It adds a lovely texture and heartiness. Or, for a quicker option, a cold buckwheat salad is perfect for meal prep. Just cook your buckwheat, let it cool, then toss it with chopped cucumber, tomatoes, bell peppers, fresh parsley, and a lemon-herb vinaigrette. Add some crumbled feta or pecans for extra crunch and flavor. Buckwheat is truly one of those 'foods with buckwheat' that deserves a spot in everyone's pantry. Yes with flame on! Basically you want it to boil down so water is gone but don’t leave unattended because it will boil fast and the buckwheat will stick to the bottom if you burn it! But roasting beforehand will make it cook properly and prevent it from being undercooked or soggy. You only need 1 cup of water
