Dandelion Jelly

✨Spring is here, which means dandelions are popping up everywhere and FAST! Sooo what do you do with them? You can make a number of things with dandelions such as jelly, ice cream, put them in salads, ect.

✨Dandelions are rich in vitamins and minerals and are a natural antioxidant! They are good for your heart, high blood pressure amongst other things.

✨So in order to make dandelion jelly you’ll need these ingredients:

~ 4 cups of dandelions (roughly a one gallon bucket when picked)

~One packet of pectin

~2 tbsp lemon juice

~4 cups sugar

✨How to make it:

Step 1) Pick roughly one gallon of dandelions (it’ll equal 4 cups when picked apart)

Step 2) Separate the flower (the yellow) from the green. The green parts will make your jelly bitter.

Step 3) Boil water and then pour over your dandelion petals in a jar, give it a good stir to get any air bubbles out. Then put a flat and a ring on it and put it in your refrigerator to steep for 24 hours.

Step 4) Strain all your liquid from your dandelions, the liquid is now dandelion tea and you can drink that as it is.

Step 5) Mix your dandelion liquid, the pectin and the lemon juice and bring to a boil for 1 minute. Then add your sugar and bring back up to a boil for 1-2 minutes.

Step 6) Put your hot jelly mixture into your jars and leave 1/2” headspace, the wipe the jar down, put your flat and rings on.

Step 7) Place your jars into a water bath canner for 10 minutes. Then let them cool down. These are now shelf stable for 2 years!
