• Sugar (½ tbsp) : Azúcar

• Red onion : Cebolla morada

• Corn tortillas : Tortillas de maíz

• Cilantro : Cilantro

• Lime : Limón

• Mozzarella cheese : Queso mozzarella

1. Cut the beef into chunks. Sear in oil and season with salt and pepper.

2. Add water to cover, white onion, cinnamon sticks, and dried chiles. Let chiles soften, then remove the seeds.

3. Blend the onion and chiles with beef broth, garlic, oregano, black pepper, and sugar.

4. Pour the sauce back into the pot, cover, and simmer on low for about 3 hours. Add water if needed.

5. Shred the beef once tender.

6. Dip tortillas in the oil from the consommé, fill with cheese, beef, onion, and cilantro.

7. Cook until crispy, flip, and serve with lime.
