Chopped bell pepper one of each color - onion - ground turkey or beef - season how you like - full container of beef broth- 1 cup of rice - 1 can diced tomatoes- 1 can of tomato sauce
I’ve found that using a mix of bell peppers of different colors really brightens up the soup and adds layers of flavor. The combination of ground turkey and beef broth gives it a rich yet light taste, making it a satisfying meal that’s not too heavy. Adding rice helps to bulk up the soup so it’s great for a fulfilling dinner or lunch. When I make this soup, I like to season it with garlic, cumin, and smoked paprika to enhance the natural sweetness of the peppers and add a subtle smoky depth. You can easily customize the seasoning based on your preference—some chili flakes work well if you want a bit of heat. Also, using a full container of beef broth ensures the soup has enough liquid for slow simmering, allowing the rice to absorb all the flavors. For a healthier version, ground turkey is my go-to, but using ground beef can make the soup heartier. Sometimes I add a handful of spinach or kale towards the end of cooking to boost the nutrition without overpowering the flavor. This bell pepper soup reheats well and tastes even better the next day, making it ideal for meal prepping. Serve it with a side of crusty bread or a light salad for a complete and delicious meal.
