I love how using a lemon cake mix simplifies the flavor base, giving the cookies a bright, citrusy zing without the need to zest fresh lemons or squeeze juice. The Cool Whip in the batter adds moisture and tenderness, resulting in cookies that are surprisingly soft and fluffy rather than dense. One tip I learned while making this recipe is to not be worried if the dough feels sticky—that's normal due to the Cool Whip. Rolling the dough in powdered sugar before baking helps form a delightful sweet crust that contrasts the soft interior. Baking for just 8 to 10 minutes is key to getting edges golden but keeping the cookie center chewy. You can easily customize these cookies by adding in some lemon extract to deepen the citrus flavor or sprinkling a bit of coarse sugar on top for extra crunch. If you want a more intense lemon punch, a light drizzle of lemon glaze after baking makes them look and taste even more special. This recipe is great for baking with kids due to its simplicity and minimal ingredients. Overall, these lemon cookies are an effortless, crowd-pleasing dessert that's great served with tea or coffee during spring or summer gatherings.
