One tip from my experience is to use well-ripened bananas as they tend to be sweeter and softer, which contrasts nicely with the crunchy toffee bits. When spreading the nut butter, a slightly thicker layer helps keep the banana together and provides a rich taste. For the chocolate coating, using a good quality chocolate you enjoy eating plain will enhance the flavor. I find that mixing the solid coconut oil with the chocolate not only makes the coating smoother but also gives it a nice sheen when set. The double boiler method is essential to avoid burning the chocolate and ensures even melting. When coating the banana bites, working in small batches keeps the chocolate from hardening too quickly, allowing each piece to be evenly covered. After freezing the coated bites, letting them thaw at room temperature for about 15 minutes before serving makes them easier to bite into without melting too fast. These frozen banana bites also make a great customizable snack—swap out peanut butter for almond or cashew butter if preferred, or try different toppings like crushed nuts, shredded coconut, or sprinkles for variety. They’re perfect for summer snacks, parties, or as a quick dessert to satisfy your sweet tooth without feeling too heavy.
