If you want something flavorful, spicy, and comforting, this Jamaican-inspired jerk chicken paired with savory callaloo rice is the perfect dinner.
Ingredients
For the Jerk Chicken
• 6–8 chicken thighs or drumsticks (I used breast)
• 2 tbsp jerk seasoning (store-bought or homemade)
• 1 tbsp brown sugar
• 1 tbsp soy sauce
• 1 tbsp olive oil
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp smoked paprika
• ½ tsp black pepper
• 1 tbsp lime juice
For the Callaloo Rice
• 1 cup long grain white rice
• 1½ cups water or chicken broth
• 1 cup chopped callaloo (or spinach as a substitute)
• ½ small onion, diced
• 1 clove garlic, minced
• 1 tbsp butter or oil
• ½ tsp salt
• ¼ tsp black pepper
• ½ tsp thyme
Instructions
1. Marinate the Chicken
Pat the chicken dry and place in a bowl.
Add jerk seasoning, brown sugar, soy sauce, olive oil, garlic powder, onion powder, smoked paprika, black pepper, and lime juice.
Rub the seasoning all over the chicken until fully coated.
Let it marinate for at least 30 minutes (overnight for best flavor).
2. Bake the Chicken
Preheat oven to 400°F.
Place the chicken on a lined baking sheet or in a baking dish.
Bake for 40–45 minutes, flipping halfway through, until the chicken is cooked through and slightly caramelized.
3. Cook the Callaloo Rice
Rinse the rice under cold water.
In a pot, heat butter or oil over medium heat.
Sauté onion and garlic until fragrant (about 2 minutes).
Add rice and toast for about 1 minute.
Pour in water or broth, salt, pepper, and thyme.
Bring to a boil, then reduce heat to low and cover.
Cook for 15 minutes.
4. Add the Callaloo
Stir in the chopped callaloo (or spinach), cover again, and cook for another 3–5 minutes until the greens are wilted and the rice is tender.
5. Serve
Fluff the rice and serve alongside the jerk chicken. Garnish with fresh herbs or lime if desired.
Trying out this oven jerked chicken recipe was a delightful experience that brought vibrant Jamaican flavors right into my kitchen. One thing I learned is that the key to getting the perfect balance of heat and savory notes lies in the marination time. Although the recipe suggests 30 minutes, letting the chicken marinate overnight really deepened the flavors and made the meat tender and juicy. Another tip is about the callaloo rice. Since callaloo can sometimes be tricky to find, substituting it with fresh spinach worked remarkably well without compromising the dish’s essence. I toasted the rice with the sautéed onions and garlic before simmering, which enhanced the nuttiness and aroma of the rice significantly. For those who like a smoky undertone, the addition of smoked paprika in the marinade made a noticeable difference, complementing the traditional jerk seasoning beautifully. Baking the chicken at 400°F and flipping midway helped get a lovely caramelized crust that sealed in all the juices. To elevate the presentation and taste, garnishing with a squeeze of fresh lime juice and some chopped fresh herbs like cilantro or parsley adds a refreshing citrus note that balances the spice perfectly. This meal pairs well with a simple side salad or roasted vegetables if you want to make it more filling. Overall, this oven jerk chicken and callaloo rice recipe is a fantastic option for anyone craving authentic Caribbean flavors without needing a grill or complicated techniques. It's a crowd-pleaser that’s easy enough for weeknight dinners yet special enough for guests. I highly recommend trying this recipe with homemade jerk seasoning if you have the chance, as it can be adjusted to suit your preferred spice level and ingredient availability.
