What I’d Cook For My Mom

So my mom loves tacos but she doesn’t get to eat it a lot and she loves the ones I usually make her!

These are my easy cilantro lime shrimp tacos:

Ingredients

For the shrimp:

* 1 lb shrimp, peeled & deveined

* 1 tbsp olive oil

* 1 tsp paprika

* 1 tsp garlic powder

* 1 tsp onion powder

* 1/2 tsp chili powder

* 1/2 tsp cumin

* Salt & pepper to taste

* Juice of 1 lime

* Fresh cilantro, chopped

For the tacos:

* Corn tortillas

* Guacamole

* Pico de gallo

* Cilantro lime sauce

* Tabasco

* Extra cilantro for garnish

* Lime wedges

Sides:

* Yellow rice

* Roasted jalapeño

Instructions

1. Season shrimp with paprika, garlic powder, onion powder, chili powder, cumin, salt, pepper, olive oil, and lime juice.

2. Cook shrimp in a hot skillet for 2–3 minutes per side until pink and slightly charred. Toss with fresh cilantro.

3. Warm corn tortillas in a skillet until lightly toasted.

4. Spread guacamole on each tortilla, then add shrimp, pico de gallo, cilantro lime sauce, and a few dashes of Tabasco.

5. Garnish with fresh cilantro and serve with lime wedges, yellow rice, and a roasted jalapeño on the side.
