Protein taco pasta
Threw this together last minute for dinner! Most ingredients were from Aldi 🍝
- 3/4 package of protein pasta (we used chickpea)
- 1 lb ground beef
- 1/2 onion
- 1 whole pepper (I used yellow)
- handful of broccoli florets
- 1 can of tomato with green chiles
- 4 oz of garlic and herb goat cheese
- 1 cup of taco/mexican shredded cheese
- seasonings: S&P, fajita seasoning, garlic powder, onion powder, garlic butter seasoning
1. Boil and drain pasta and set aside
2. Cook broccoli and yellow pepper, season then set aside
3. Dice up half an onion and season w/ S&P then add minced garlic. After 2 mins add ground beef and seasonings. Drain meat when it’s done
3. Add broccoli and pepper back in then add in 1 can of diced tomato with green chiles. Add goat cheese, shredded cheese and a tiny bit of milk to thin out the sauce.
4. Once the sauce has thinned out, add pasta back in mix and enjoy 🍴 👌🏼
