Italian Pot Roast

Occasion & Servings: Makes 8-10 servings

Ingredients: 2.5 lb chuck roast

4 medium potatoes

2 cups of baby carrots

1 stalk of celery

1/2 cup of diced tomatoes

10 oz tomato soup

1 tsp black pepper

1 tsp oregano

1 tsp basil leaves

1 tsp parsley

1 tsp vinegar

Detailed Steps:

Quarter potatoes

Measure out 2 cups of baby carrots

Chop celery stalk into 1/2-1" pieces

Measure out 1/2 cup diced tomatoes

Add all to crockpot

Season roast with black pepper

Add roast to crockpot on top of veggies

Mix tomato soup, vinegar and all dry ingredients

Pour over roast and veggies

Cook on low for 10-12 hrs or high for 4-6 hrs
