seafood gumbo
homemade seafood gumbo recipe
ingredients:
1/2 cup oil
1/2 cup flour
1 yellow onion, diced
1 green onion, diced
1 green bell pepper, diced
1-2 celery stalks, diced
10 cherry tomatoes
2 cloves of garlic, minced
5 cups chicken broth
1 pack eckards sausage, sliced
1lb raw shrimp
1 bag of gumbo blue crab
2 bay leaves
2-3 spoonfuls diced green chilies (optional)
2tbsp worcheshire sauce
salt
pepper
thyme
oregano
tony charchers
old bay
garlic powder
onion powder
chives for garnish
parsley for garnish
cooked white rice for servings.
directions:
-first cook your sausage until it has a nice brown on each side and then set aside
-grab a big pot and turn the burner on medium heat. add in your oil then slowly add in your flour. make sure to mix together very well to create a roux. mix continuously for about 15-20 minutes until it reaches a dark brown color.
-add in your diced onions, celery and bell pepper and season with salt and pepper. stir frequently and cook until soft, about 5 minutes.
-add in garlic, thyme, oregano, smoked paprkika and bay leaves. cook for about 1 minute or until fragrant. add in your browned sausages and make sure they are well coated with the vegetable mixture.
-slowly pour in the chicken broth, continuously stirring while adding it in. once mixed together well add in tomatoes and green chilies. season more with old bay, garlic powder and onion powder.
-bring the mixture to a simmer. allow to simmer on low for 20 minutes, covered. add in worcheshire sauce. simmer another 20 minutes, covered.
-add in gumbo grab allow to cook for 5 minutes. add in shrimp and allow to cook for another 5 minutes or until shrimp are cooked through. adjust seasoning as needed.
-serve gumbo over cooked rice and top with more green onions. serve with grilled bread.
