Thai Chicken Salad

Ingredients:

1 bag of coleslaw mix

1 red bell pepper

1/2 cup Cucumber

1/2 cup shredded carrots

1/4 cup scallions

Handful chopped cilantro

Handful chopped fresh basil

3 cups Shredded chicken (use rotisserie, it's easiest!)

For peanut dressing:

5 tbsp peanut butter

1 tbsp lime juice

1 tbsp honey

3 tbsp soy sauce

1 tsp ginger

1/2 tsp sesame oil

1/2 tsp Garlic Powder

4 tbsp water
