ingredients:

for the shortbread:

- 125 g unsalted butter, room temp

- 60 g granulated sugar

- 1 tsp vanilla extract

- 180 g all purpose flour

- 1/4 tsp salt

for the strawberry glaze:

- 110 g powdered sugar

- 2 tbsp strawberry purée (2 large strawberries hulled and mashed with a fork)

- 1 tsp unsalted butter, melted

filling:

- just a little bit of your fav strawberry jam

directions:

- cream the butter and sugar together with a hand mixer (or stand mixer) for about 2 minutes until pale and light. add the vanilla and mix again

- add the flour and salt and mix on low speed until the dough starts to come together. the dough will look raggedy but you’ll know it’s ready once it starts to pull off the sides of the bowl and forms a clump when pressed together

- shape the dough into a rough disc with your hands and wrap in plastic wrap. refrigerate for 10-15 minutes

- lightly flour a clean work surface and roll the dough out to 1/2 inch thickness

- use a cookie cutter to stamp out the cookies and lay them onto a prepared baking sheet. refrigerate for at least 30 minutes

- preheat the oven to 325°F

- bake the cookies for 11-13 minutes or until they are just starting to become golden around the edges

- cool on the tray for 10 minutes before transferring to wire rack

- make the glaze: mix together powdered sugar, melted butter, and mashed strawberries in a bowl

- divide the cooled cookies so that you have an equal number of tops and bottoms

- dip the tops into the glaze, allowing any excess to drip off and place on a plate lined with parchment paper to allow the icing to set

- spread strawberry jam onto the bottoms and sandwich the cookies together. enjoy!!
