SWEET CARDAMOM BREAD WITH HONEY ORANGE BUTTER
Every two weeks, my husband meets with his D&D group and, regardless of which of us is hosting the session, I try to make something fun for everyone to snack on.
This weekend, I made a few loaves of sweet cardamom bread with honey orange butter, using a recipe by Rhubarb & Lavender.
Even the corgis were impressed.
There’s nothing quite like the comforting aroma of freshly baked bread filling your home, especially when it’s infused with the warm, spicy notes of cardamom. I absolutely adore experimenting with different bread recipes, and a sweet cardamom loaf is always a family favorite. It’s so versatile, perfect for breakfast with coffee, or as a delightful snack during a cozy evening in. I know many of you are passionate about sourdough baking, and for good reason! The tangy complexity and chewy texture of a sourdough loaf are truly unique. While the recipe I shared earlier is for a traditional yeasted sweet cardamom bread, I totally get the appeal of a cardamom sourdough loaf. The main difference lies in the leavening agent – commercial yeast for a quicker rise and milder flavor, versus a sourdough starter for that characteristic tang and a longer, more nuanced fermentation process. Both result in a delicious, aromatic bread, but with distinct flavor profiles and textures. My sweet cardamom bread focuses on that pure, buttery cardamom warmth, while a sourdough version would add an extra layer of fermented goodness. If you're eager to try your hand at a cardamom sourdough loaf, here are a few tips I've picked up from my own baking adventures. First, ensure your sourdough starter is active and bubbly; a strong starter is crucial for a good rise. You might need to adjust the hydration slightly compared to a traditional recipe, as sourdough can handle more water. When incorporating the ground cardamom, blend it into your dry ingredients evenly to ensure every bite is fragrant. The fermentation process for sourdough will be much longer, often involving a bulk fermentation at room temperature followed by a cold proof in the fridge overnight. This slow process develops deeper flavors. For shaping, you can still achieve a beautiful braided loaf, just like my yeasted version, but handle the dough gently to maintain its airy structure. Bake it in a Dutch oven or on a baking stone in a preheated oven to get that fantastic golden-brown crust that's so characteristic of a well-baked sourdough. Whether you're making a yeasted or sourdough version, a few general tips can elevate your cardamom bread. Always use fresh, high-quality cardamom pods and grind them just before mixing for the most potent aroma. Don't rush the kneading or proofing stages; patience is key to developing good gluten structure and a light, airy crumb. When baking, keep an eye on your loaf in the oven, ensuring it reaches that perfect golden-brown color without over-baking. And seriously, don't skip the honey orange butter! It takes any cardamom bread to the next level. Spreading a generous dollop on a warm slice fresh out of the baking pan is pure bliss. Even my corgis give approving glances when they smell it baking! Baking bread, especially something as comforting as a sweet cardamom loaf, is such a rewarding experience. It’s a labor of love that fills your home with incredible scents and your table with a delicious treat. Happy baking!
