🌿 Homemade Blueberry Pop-Tarts

These turned out so good and they’re easier than they look! Definitely something i wouldn’t mind giving my toddler for breakfast! Here’s how I made them:

🥧 Dough

Mixed 2½ cups flour + 1 tbsp sugar + 1 tsp salt in my stand mixer (paddle attachment).

Added 1 cup cold cubed butter and mixed til crumbly with little butter bits showing.

Drizzled in ¼–⅓ cup ice water just until the dough held when pinched.

Split into 2 discs, wrapped, and chilled 30 mins.

𐙚 Filling

Cooked 1 cup blueberries + ¼ cup sugar + 1 tbsp lemon juice + lemon zest in a small pot (5–7 mins).

Added a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water) til jammy. Cooled completely.

✧ Blueberry glaze magic

Simmered ½ cup blueberries + 1–2 tsp lemon juice til juicy, blended smooth (or leave rustic!).

Cooled it, then mixed ¾–1 cup powdered sugar + 1–2 tbsp of the purée til glossy and dreamy ❁

✎ Tip: Bake at 375°F til golden (20–25 mins) + let cool before glazing for the prettiest drizzle!
