Aldi Cinco de Mayo 🌮🇲🇽🌮 Meals - $15 or less

Celebrate Cinco de Mayo on a budget or just save for your next taco Tuesday!

Prices based on my local Aldi in western PA through Instacart (full time night shift working mom of a one-year-old here - don't hate) so prices may be slightly lower in store

I don't count basic essentials like eggs, milk, and spices towards total price.

Street Corn Quesadillas - preheat oven to 400. mix drained chicken and desired amount of street corn dip, taco seasoning, and shredded cheese. place mixture into individual tortillas, add more cheese if desired. spray with oil and cover with another baking sheet. bake for 15 minutes, remove pan and bake an additional 5 minutes to get the tops crispy. can also individually pan fry each quesadilla. heat beans with taco seasoning. serve with salsa on the side for dipping

Walking Tacos - brown ground beef with taco seasoning. dice tomatoes. assemble as follows: chips, meat, cheese, lettuce, and tomatoes. (other suggested topping - sour cream, black olives)

Carnitas Nachos - assemble nachos: chips, cheese, carnitas (no need to heat), more cheese. make individual plates and microwave or assemble on a sheet pan and bake in oven until cheese is melted and carnitas are warm. top with jalapenos...and any other desired toppings (i.e. onions, sour cream, salsa)
