3 Ingredient Aldi Meals - under $15
Because this tired momma doesn't have the time (or money) to fool with cooking complicated, time consuming meals.
Prices based on my local Aldi in Southwest Virginia through Instacart.... because no one wants to go grocery shopping with a toddler, am I right? (or is it just me?)
I don't count basic essentials like eggs, milk, spice towards total price.
Asian Salad - cook chicken according to package directions. assemble salad. add cooked chicken to salad and 2 drained mandarin orange cups. LOVE this for a quick lunch and easy to prep. Serves 2.
Super Simple Chili - bring 3 cups of water to boil, add half the bag of chili mix and tomatoes. simmer for 20 minutes. while simmering, brown ground turkey. when done, add to chili and mix well. serve with cornbread, fritos, or just cheese and sour cream on top.
Makes 4 servings, or 8 if making the whole bag
Pancake Bites - mix together sausage (uncooked), 1 cup pancake mix, and 2 cups shredded cheese. roll into even sized balls and place on baking sheet. Bake at 350 for 20 minutes, or until cooked through. Serve with syrup for dipping if desired. To make a complete meal add eggs, yogurt, or fruit. #briner

As someone who has juggled a busy household while trying to keep meals simple and affordable, I can definitely relate to the struggle of cooking complicated dishes after a long day. Aldi's selection has been a game changer for me, offering quality ingredients at prices that don’t break the bank. For example, their Asian Chopped Salad Kit combined with cooked chicken breast and mandarin orange cups makes for an effortless, refreshing lunch that my whole family enjoys. One tip I’ve learned is to rely on affordable protein options like Aldi’s fresh ground turkey when making chili. Using a chili mix and canned tomatoes simplifies the process, and adding cornbread or sour cream on top takes it to the next level while being satisfying and cost-effective. The Pancake Bites recipe has been a hit with kids and adults alike—mixing uncooked pork sausage, gluten-free pancake mix, and shredded sharp cheddar cheese, then baking it creates a fun finger food. Pairing these bites with syrup and some fresh fruit makes a well-rounded breakfast or snack. Keep in mind that while these meals are gluten-free friendly, always double-check labels to accommodate specific allergies or dietary needs. Shopping via Instacart from my local Aldi saves me the hassle of crowded stores, especially with toddlers tagging along. By not counting basic staples like eggs, milk, or spices towards the total price, these meal ideas stay truly budget-friendly. Incorporating these simple recipes into your weekly meal plan can help reduce stress around mealtime while keeping your family nourished and happy.
