This banchan is seriously a game-changer for any Korean meal, and once you try it, you'll wonder how you ever lived without it. First off, getting your perilla leaves perfectly clean is key. My recipe mentions soaking them in water with a bit of vinegar for 5 minutes, but I can't stress enough how important it is to gently rub each leaf under running water afterward. Perilla leaves can sometimes have a bit of grit, and you definitely don't want that in your delicious banchan! After washing, make sure to dry them thoroughly. A salad spinner works wonders, or you can lay them out on clean kitchen towels. Excess water can dilute your brine, so don't skip this step! Now, let's talk about the brine – it's the heart of the flavor! My recipe uses a classic blend of soy sauce, fish sauce, and sugar, which creates that beautiful balance of savory, sweet, and umami. For the soy sauce, I usually go for a good quality Korean soy sauce, but any low-sodium soy sauce will work. The fish sauce adds a depth that's hard to replicate, so don't be shy with it! If you want to add a little extra zing, a splash of maesil cheong (Korean plum extract) can work wonders. I sometimes tweak the sugar level slightly depending on my mood – a little more for a sweeter pickle, or a little less if I'm craving something more savory. You saw I slice jalapenos and onions to layer with the perilla. This isn't just for looks; they infuse the brine with a fantastic fresh spice and aromatic quality. If you're not a fan of too much heat, you can use milder peppers, or remove the seeds from the jalapenos. Thinly sliced garlic cloves or even a few slices of ginger can also be lovely additions for an extra layer of flavor. It's all about personal preference here, so feel free to experiment! The layering process is super satisfying. Gently stacking the leaves with the jalapenos and onions ensures every leaf gets coated evenly. And that 12-hour room temperature soak? Crucial! It kickstarts the fermentation process just enough to infuse the flavors deeply and give the leaves that perfect pickled texture. After 12 hours, pop it in the fridge, and you're good to go. Remember to gently flip the leaves with clean chopsticks every now and then to ensure even pickling. Speaking of the 'Perilla Debate' (깻잎논쟁) – it's such a classic Korean topic! My friends and I have definitely had heated discussions about it. It really highlights how much cultural nuance there is around gestures and relationships. Eating these pickled leaves is an art form in itself – usually, you pick up a few leaves with your chopsticks, place them on your rice, and enjoy. Sometimes they stick together, and that's totally normal! But the idea of someone helping your partner separate a perilla leaf... well, that's where the debate begins, isn't it? It's funny how something so simple can reveal so much about different perspectives on boundaries and politeness. Personally, I realized this might be a cultural thing and seen differently, but to me, helping out somebody who's struggling. It's not a way of showing that they're intending to you cheat or are cheating on their significant other.actual romantic things like hugging, kissing, or even questionable text would be more that way, but I guess in that culture, it is seen that you don't do that unless its your significant other that needs assistance, but what about, for instance, if you have different generations of people, and someone is having trouble or someone has mobility issues, there's a lot of grey area there
