... Read morePeach & blueberry crisp is a classic dessert that beautifully combines the sweetness of ripe peaches with the tangy burst of fresh blueberries. To enhance the flavor, choose fresh, ripe peaches that are juicy but firm, and wash the blueberries thoroughly to maintain their freshness. In this recipe, the use of vanilla paste enriches the fruit filling with a warm and aromatic note that complements the natural sweetness of the berries and peaches. The cornstarch acts as a thickening agent, ensuring the fruit juices form a luscious sauce as the crisp bakes. The crumble topping is made with equal parts flour, oats, and brown sugar, which adds a delightful texture contrast with a mix of crispiness and chewiness. Using brown sugar instead of white sugar enhances the caramel flavors, harmonizing well with the baked fruit. Butter and a splash of heavy cream in the crumble provide richness that melts during baking, creating a golden, crispy topping. Cinnamon sprinkled both in the fruit filling and the crumble topping adds a warming spice dimension that complements the fruits' natural flavors. Baking the crisp at 350°F for 40-45 minutes allows the fruit filling to bubble and thicken while the crumble achieves a perfect, golden brown color. It's important to check for bubbling juices at the edges which indicates the filling is cooked through. Serve this peach and blueberry crisp warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent dessert. This recipe is perfect for summer and fall when peaches and blueberries are in season, making it ideal for gatherings and holiday meals. For a variation, consider adding chopped nuts like pecans or walnuts in the crumble for extra crunch and flavor, or a touch of lemon zest in the fruit mixture to brighten the overall taste.
