Sharing my experience making Rosca de Reyes at home has truly been a rewarding journey. The key to achieving that signature soft texture and citrus aroma lies in activating the yeast properly with warm milk and sugar, which creates a perfect rise and light crumb. I highly recommend using fresh orange zest and juice for the authentic flavor—the zest adds aromatic oils that elevate the bread's fragrance, while the juice adds a subtle tangy sweetness. When mixing the dough, be sure to add softened butter gradually; this enriches the dough, making it tender yet sturdy enough to hold its shape during rising. One tip I found useful during the first proofing (rising) phase is to cover the dough with a clean, damp cloth in a warm place. This helps maintain moisture and warmth, encouraging the dough to double in size within the expected 1½ to 2 hours. For decorating, the topping paste made from equal parts powdered sugar, flour, and butter is easy to prepare and adds a delightful crunchy sweetness. Optional flavors like vanilla extract or cocoa powder can be added to customize the topping, creating unique variations like vanilla-scented or chocolatey crusts, which were big hits in my family gatherings. Shaping the dough into a ring is more than a tradition—it also ensures even baking. After the second rise, be gentle when creating the ring shape to keep the dough’s airiness intact. Baking at 350°F (175°C) for about 25–35 minutes results in a golden crust with a moist interior. It's important to keep an eye on the oven, as baking times can vary with altitude and oven types. Finally, Rosca de Reyes is more than just a bread; it's a cultural experience that brings loved ones together. Baking it from scratch adds a personal touch to the holiday celebrations, turning the kitchen into a cozy space filled with warmth, tradition, and the irresistible aroma of citrus and sweet bread.
