Ingredients:
3 sticks, softened
3 cups granulated sugar
5 large eggs
3 cups cake flour
1/2 tsp baking powder
1 can crushed pineapple (drained, save a little juice)
1 cup milk
1 tbsp vanilla extract
1/2 tbsp pineapple extract
Pineapple cream cheese glaze: Cream cheese, powdered sugar, pineapple juice from drained pineapples, vanilla extract, pineapple extract
Instructions:
Preheat oven: to 325°F (163°C). Grease and flour a Bundt pan (I used cake goop)
1. Cream butter and sugar: Beat together until light and fluffy (about 3–4 minutes).
2. Add eggs: One at a time, mixing well after each.
3. Combine dry ingredients: In a separate bowl, whisk flour, baking powder.
4. Add dry ingredients to the creamed mixture alternating flour and milk (Start with dry, end with dry)
5. Fold in crushed pineapple and vanilla (plus pineapple extract if using).
6. Bake: Pour batter into pan and bake for 1hr 15 minutes, or until a toothpick comes out clean.
Cool: Let the cake rest in the pan for 10–15 minutes, then turn out onto a wire rack.
