Summer cooking 😋

... Read moreSummer is the perfect time to enjoy light and flavorful meals that don’t require standing by the stove for hours. When I think about summer cooking, I aim for dishes that maximize fresh ingredients and keep the kitchen cool. One of my favorite ways to stay inspired is to focus on seasonal fruits and vegetables such as tomatoes, cucumbers, zucchini, and berries, which can be quickly turned into salads, chilled soups, or grilled sides. For example, gazpacho—a cold Spanish tomato soup—is incredibly refreshing and easy to prepare. Just blend ripe tomatoes, cucumbers, bell peppers, garlic, olive oil, and vinegar, and you have a healthy, no-cook dish perfect for hot days. Adding fresh herbs like basil or cilantro uplifts the flavor even more. Grilling also plays a big role in summer cooking. Marinating vegetables or lean proteins like chicken or fish in citrus juices and herbs before grilling adds vibrant taste without heaviness. It’s a great way to reduce cooking time and heat indoors. Don’t forget about quick and tasty snacks or light dinners like wraps, fresh fruit bowls, and chilled pasta salads. Using whole-grain pasta with vegetables and a light vinaigrette dressing makes for an energizing and satisfying meal. Incorporating these easy summer cooking methods allows you to enjoy meals that are both delicious and harmonious with the season’s energy. Plus, experimenting with fresh, natural ingredients helps me feel more connected to the food I eat and encourages healthier choices all summer long.
