SLOW COOKED SATAY CHICKEN

Serves: 4 | Prep: 5 min | Cook: 8 hrs LOW or 4 hrs HIGH

Ingredients

* 600g chicken thighs, diced

* 1 onion, diced

* 1 packet @Mingle Seasoning satay seasoning

* 250ml coconut cream

* 200ml chicken stock

* 5 tbsp natural peanut butter

* 1 red capsicum

* 1 zucchini

* 1 head broccoli

* 2 carrots

Method

1. In the slow cooker, whisk together the satay seasoning, coconut cream, chicken stock, peanut butter, honey, salt and pepper until smooth.

2. Add the diced chicken and onion, stirring to coat in the sauce.

3. Cook on LOW for 8 hours or HIGH for 4 hours.

4. About 1 hour before serving, stir in your chosen vegetables and continue cooking until tender.

5. Give everything a good stir before serving over rice or noodles.
