My face when I realised I accidentally bought purple sweet potato 🤦‍♀️ but these beef & sweet potato bowls are a go to for us.

Ingredients for 12 servings:

2x brown onions

2kg beef mince

1.8kg Sweet potato

2x brocolli heads

4x packs @Mingle Seasoning taco seasoning

2x tubs cottage cheese

Method:

1. Chop onion, sweet potato and brocolli

2. Season sweet potato in salt & pepper then bake in oven until soft

3. Brown onions then add beef mince and cook until browned

4. Add mingle seasoning and a cup of water

5. Steam brocolli

6. Portion out into glass containers

7. Serve with cottage cheese
