“I’m doing well, how are you doing” and when they say good I respond “that’s good” 🤣 I do agree that it’s one of those questions that people just ask as a formality, and don’t actually care how you’re doing lol

My go to is “I’m good, how are you?” but sometimes I like being transparent and catching people off guard when I’m having an off day. People never expect you to say you’re not okay.
