Cooking as a stay-at-home mom of three is both a challenge and a joy. After managing my kids all day, preparing a home-cooked meal offers a peaceful moment to unwind and connect with family. My go-to is a comforting Dominican-inspired dinner that’s simple but full of flavor. I start by boiling water with a pinch of salt to cook the rice perfectly fluffy. Meanwhile, I season chicken to taste and sear it in a hot pan with some oil — frying it at the end adds a crispy finish I love. Vegetables like green peppers, onions, and a touch of minced garlic are essential for an aromatic base when making beans. Since I ran out of cilantro this time, the garlic and peppers gave the beans a lovely warmth and depth without overpowering the dish. What I appreciate most about this cooking ritual is that it’s uncomplicated and nurturing—no fancy techniques needed to create a cozy meal. It's also a nice opportunity to sneak in some teaching moments for my kids, showing them simple steps like washing rice or chopping veggies safely. What’s your comfort meal after a hectic day?
