Chicken taquitos 🤍✨

Homemade chicken taquitos - several ways you can make them. This is just one way we tried it. We’re doing buffalo chicken next! 😊

Use whatever kind of tortilla you want - I only had flour tortillas on hand and was not about to go to the store…

One rotisserie chicken - shredded

One block cream cheese

1/3 cup sour cream

1/2 cup salsa

1 1/2 cups shredded cheese (your choice)

Mix all ingredients together - including shredded chicken. Warm up the tortillas in the microwave for 20-30 seconds. Take 2-3 tablespoons of the chicken mixture and put it in the middle of the tortilla and roll it up tightly. Take a toothpick and insert in so it doesn’t unroll. Warm up some oil in a skillet and fry each side for 2-3 minutes. Drain on a paper towel lined plate. Serve warm with sour cream or salsa. This was actually really good.

... Read moreChicken taquitos are a popular Mexican-inspired dish that combine crispy tortillas filled with a flavorful chicken mixture. This homemade version offers flexibility with ingredients, allowing you to customize based on what you have available. Using a rotisserie chicken is a great shortcut that adds rich, savory flavor without extra prep time. The creamy mix of cream cheese, sour cream, salsa, and shredded cheese creates a luscious filling that balances nicely with the slight crispiness of the fried tortillas. When preparing taquitos, warming the tortillas before rolling will help prevent cracking and make them easier to handle. Securing them with toothpicks ensures the filling stays inside during frying. Cooking in a medium-hot skillet with enough oil to crisp the exterior evenly will result in golden brown taquitos. Draining on paper towels helps reduce excess oil. For variations, you can try different cheeses such as cheddar, Monterey Jack, or a Mexican cheese blend for unique flavor profiles. Using flour tortillas is common and convenient, but corn tortillas can also be used for a more traditional taste. To reduce fat, baking the taquitos on a sheet pan at 400°F (200°C) for about 15-20 minutes until crisp is a healthier alternative to frying. Pairing these taquitos with fresh salsa, guacamole, or a dollop of sour cream makes them a delicious appetizer or main dish. They also make excellent party finger food or game day snacks. For a twist, try buffalo chicken seasoning or adding jalapeños to the filling for heat. This recipe offers a simple, versatile base that you can easily adapt to your taste and pantry items while enjoying the satisfying flavors of homemade chicken taquitos.

You can mix a paste of flour and water to use like a glue on the tortilla, so it doesn't unroll instead of the toothpicks. I'll have to try this version. Thank you ❤️
