Ingredients:

• 600g / 1.3lbs boneless, skinless chicken thighs (preferably 6 evenly sized thighs)
• 1 1/2 teaspoons smoked sweet paprika
• 1 teaspoon dried oregano
• 1/2 teaspoon garlic powder
• 1 teaspoon salt
• 1/4 teaspoon onion powder
• 1/4 teaspoon black pepper
• 1/8 - 1/4 teaspoon cayenne pepper
• 1 tablespoon olive oil
➡ Sauce
• 1 small white onion
• 100g diced chorizo*
• 2 cloves garlic
• 60ml / 1/4 cup dry white wine
• 180ml / 3/4 cup low-sodium chicken stock
• 180ml / 3/4 cup heavy cream, room temperature
• 20g / 1/4 cup freshly grated Parmesan cheese
• 1/2 bunch fresh basil (about 15g)
• 175g baby plum tomatoes
Steps:
😋Season both sides of the chicken thighs evenly with the spices. Heat the oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken thighs and cook until both sides are lightly browned and fully cooked through (4-5 minutes per side, depending on size). If the surface browns too quickly, reduce the heat slightly. Remove the chicken thighs, set them aside on a plate, and turn the heat to medium.🍕🥖
😋At this point, dice the onion and garlic, halve the tomatoes, and roughly chop the basil. If needed, grate the Parmesan, prepare the chicken stock, and chop the sausage—you can do this now. If you’re short on time, you can also finish these steps while the onions are frying (in the next step).🧀🧈
😋Add the onion to the remaining fat in the skillet and cook until soft. Add the sausage and fry for 2 minutes, then add the garlic and fry for another 30 seconds. Pour in the white wine, turn up the heat, and let it come to a rapid boil. Cook for about 2 minutes until almost completely evaporated. Reduce the heat slightly.🥞🧇
😋Add the chicken stock, cream, and Parmesan cheese, stirring well to combine all ingredients. Simmer quickly for 3-4 minutes until the sauce thickens, stirring frequently.
