Omakaseed Vegan by Sushi by Bou is an entirely plant-based omakase experience, coming from the amazing team behind Sushi by Bou 🍣🥬 they’re located in the back of a hotel with some of the most beautiful classy library decor i’ve ever dined in 🥹📚 this restaurant is part of their mission to make omakase-style dining accessible to everyone ✨ and i’m SO here for it
honestly i was a bit skeptical at first on how vegan omakase would work, but was amazed again and again by how the chefs were able to transform plant-based ingredients into these incredible and unique bites! their techniques like dehydrating & marinating watermelon 🍉 and creating sour cream using tofu blew my mind 🤯
there are two menus available:

🥬 bougie: 15 courses for $100
