GF Quick Pastry Dough

First, let me start by saying this is a quick dough. There are more elaborate gluten free pastry doughs, but I was requested to make a quick one! This will be different than you’re used to if you have never made a gluten free pastry dough. Trust the process and stick through!

Ingredients:

225g Gluten free flour*

1/2TB sugar

1/2tsp xanthan gum*

1/2tsp salt

40g softened butter

100g cold water

125g frozen and grated butter

*you can make your own gluten free flour blend. If you do and it does not already have xanthan gum, then I would increase the amount added to 3/4tsp*

First, make sure you have the 125g of butter frozen. Then grate it and put it back in the freezer, so it stays frozen.

In a bowl, combine your dry ingredients. You will then add the softened butter. Pinch and squeeze the butter into the flour. This will take some time, and in the end it will resemble sand.

Next, add the very cold water. Mix and knead the dough until you can form a firm ball. You may add additional water if you must, but try not to. Gluten free dough soaks up water as it develops, and you don’t want to add too much.

Next make sure your surface is lightly floured. Roll your dough out into a large rectangle. The exact measurement isn’t that important. It should be large enough to be able to do a letter fold.

Place half of the frozen butter into the middle of the rectangle. You will then fold a third of the rectangle over the butter, add the rest of the frozen butter on top of the middle where you just folded. Then fold the remaining dough on top of that. Voila! Letter fold. Since this is gluten free dough, it will not feel soft and elastic like gluten dough. You may use a dough scraper to maneuver the dough if you need to. Just stick with it!

Next, you will turn the dough and roll it out into another rectangle. You will do four more sets of letter folds. This will create layers for your pastries!

Finally, wrap your dough and let it chill in the fridge for 30 minutes at least. You can let it stay in the fridge for about a week. Just let it soften for about 15-30 minutes when you take it out to use.
