Lowcountry Firework Ooey Gooey Cake
Cake Base
Ingredients
* 2 cups all-purpose flour
* 1½ cups granulated sugar
* 2 teaspoons baking powder
* ½ teaspoon salt
* 1 large egg
* ¾ cup unsalted butter, melted
* 1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F.
2. Grease a 9×13-inch baking dish.
3. In a large bowl, combine the flour, sugar, baking powder, and salt.
4. Stir in the egg, melted butter, and vanilla until a thick dough forms.
5. Press the dough evenly into the bottom of the prepared pan.
Gooey Layer
Ingredients
* 16 ounces cream cheese, softened
* 3 large eggs
* 1 cup unsalted butter, melted
* 1 teaspoon vanilla extract
* Zest of 1 lemon
* 4 cups powdered sugar
Instructions
1. Beat the cream cheese until smooth.
2. Add the eggs one at a time, mixing well after each addition.
3. Mix in the melted butter, vanilla, and lemon zest.
4. Gradually add the powdered sugar and beat until smooth.
5. Pour the mixture evenly over the cake base.
Strawberry Coulis
Ingredients
* 2 cups fresh strawberries, hulled
* ¼ cup granulated sugar
* 1 tablespoon fresh lemon juice
Instructions
1. Blend the strawberries, sugar, and lemon juice until smooth.
2. Strain through a fine-mesh sieve if desired.
Blueberry Coulis
Ingredients
* 2 cups fresh blueberries
* ¼ cup granulated sugar
* 1 tablespoon fresh lemon juice
Instructions
1. Blend the blueberries, sugar, and lemon juice until smooth.
2. Strain through a fine-mesh sieve if desired.
Assembly
1. Pipe or spoon strawberry and blueberry coulis over the gooey layer.
2. Drag a skewer through the coulis to create a firework design.
3. Top with fresh sliced strawberries and whole blueberries.
Bake
1. Bake for 40–45 minutes, or until the edges are golden and the center is slightly set.
2. Cool completely before serving.
3. Dust with powdered sugar just before serving.
